Meet Mikito Ibaraki, the 9th-generation master brewer (or "toji" as they're called in Japan). This guy is absolutely obsessed with traditional hand-crafting methods. While many breweries have gone high-tech, Mikito and his small team still do everything by hand—from washing the rice to bottling and labeling each bottle.

They use Yamada Nishiki, often called the "king of sake rice," grown right there in Hyogo Prefecture.
