Extreme Rare Yuminariho used


A fresh and refined taste
This is a pure Daiginjo sake made with 100% Yuminariho sake rice, which can only be handled by Kawabu Brewery, and polished to 50%. As the name "FRESH" suggests, it is full of freshness in both aroma and taste compared to other SHIKI lineups.

It has a high sense of transparency and is juicy. You can feel the refined taste unique to pure Daiginjo sake that smoothly blends with your tongue. It is a bottle where you can fully taste the umami of the "Yuminariho" rice.


Old and new Yuminariho
Good water and good rice are needed to make sake. SHIKI is made with the water of the Miyagawa River system and a sake rice called Yuminariho. Yuminariho is a new sake rice that was created by a spontaneous mutation of "Ise Nishiki", a sake rice variety native to Mie Prefecture, also known as the ancestor of Yamada Nishiki. Even globally, the only sake that brews this sake rice is SHIKI. Kawatake Brewery uses this rice from the ancient Japanese philosophy of "Jojaku".

KAWABU Brewery

Kawabu Brewery is a Japanese sake brewery located in Mie Prefecture, Japan.

The brewery was founded in 1857 and is now run by its 8th generation owner.

The brewery's Hoko Sugi brand is named after the sacred spear-shaped tree that stands tall and grows with strength in the sanctity of Ise Jingu.

 

The brewery is located approximately 20 kilometers from Ise Grand Shrine (Ise Jingu), which enshrines Japan’s highest-ranking deity.

Kawabu Brewery's sake is known for its smooth and rich taste.
