【1,300 Years in the Making: The Miracle of 39 Bottles Skimmed from the Heavens】
Excavated from the Nara palace ruins of Prince Nagaya (684–729 AD), ancient wooden tablets (mokkan) revealed the long-lost recipe of the sake enjoyed by 8th-century Japanese royalty.
Brewed by the historic Nakamoto Shuzoten in Nara, this liquid history is fermented in custom-made Shigaraki clay vessels (kame). "Gayu" (meaning "Elegant Play") represents the absolute pinnacle of this project.
Without any filtration, pressing, or heat pasteurisation, artisans gently skim only the top few centimetres of the crystal-clear fluid that naturally floats to the surface—a mere 5% of the entire batch. Combining three clay pots yields just 39 bottles a year, making this one of the rarest, most collectible sakes on the planet.

■ Flavor Profile: A Dense, Golden Elixir Reimagining Sake
  • The Luxury of Unpolished Rice: Unlike modern sakes that heavily polish away the grain, Gayu uses a 1,300-year-old "Tenpyo" single-stage brewing method with local Hinohikari rice. This coaxes out an overwhelming abundance of natural amino acids, deep umami, and rich sweetness.
  • Like a Grand Cru Sauternes: Viscous, golden, and profoundly complex, its velvety texture draws immediate comparisons to the world's finest botrytized dessert wines or rare Tokaji. Yet, being a raw sake (namazake), it retains a vibrant, mouth-watering freshness on the finish.

Because of its immense structural power and acidity, Gayu transcends traditional Japanese pairings and behaves like a heavy dessert wine or an oxidative vin jaune.
