Galapagos 4TH Dimension is a Special Junmai sake brewed by Tamagawa Shuzo in Uonuma, Niigata — a region known for its pristine snowmelt water and centuries-old brewing tradition. Inspired by the biodiversity of the Galapagos Islands, this sake explores new frontiers while honoring its roots.

Crafted with four locally grown rice varieties and four distinct yeast strains, it offers a layered experience: elegant aroma, mellow umami, refreshing acidity, and a clean finish. This sake invites you to taste the “fourth dimension” — a fusion of flavor, fragrance, culture, and future.


🧬 Yeast Innovation

Each yeast contributes a unique character:

  • Mahoroba Gin – Produces high levels of ethyl caproate, resulting in a gorgeous ginjo-style aroma. Low acidity creates a smooth, mellow taste.
  • Kyokai No. 1801 – Known for strong fermentation and clean sake quality. Offers a balanced ginjo fragrance and soft mouthfeel.
  • Kyokai No. 701 – Widely used in sake brewing. Delivers moderate acidity and a vibrant aroma with reliable fermentation.
  • Kyokai No. 901 – Common in ginjo and daiginjo production. Low acidity and minimal off-flavors yield a crisp, refined finish.
