This year, we once again had the opportunity to participate in the Australian Sake Awards 2025 judging panel, an esteemed event that celebrates the quality of Japanese sake. As one of the most significant platforms for promoting sake culture and craftsmanship in Australia, this competition plays a vital role in expanding appreciation for Japanese sake. YOIYOI proudly submitted three sake varieties: Sohomare Kamon, Seppikosan Aiyama 1801, and Prince Nagaya, and we had the opportunity to witness the judging process firsthand.
What Are the Australian Sake Awards?
The Australian Sake Awards is an international sake competition that evaluates sake sold or planned for sale in Australia. The judging panel consists of professionals deeply immersed in the sake industry, including sommeliers, beverage distributors, retailers, sake specialists, and experts in sake importation and distribution.
The evaluation process follows blind tasting guidelines, meaning the labels and brand names are hidden, ensuring that sake is judged purely based on its aroma, flavor, balance, and overall quality. Additionally, all judges undergo specialized sake training before the evaluation, reinforcing their knowledge and understanding of sake characteristics.
Rigorous Evaluation: Comprehensive Judging Process
The judging process consists of two primary evaluation methods:
- Category-Based Evaluation: Each sake entry is assessed based on its individual characteristics, rather than its labeling classification, ensuring that it is evaluated for its taste, aroma, and balance.
- Food Pairing Assessment: Sake is tested with a variety of food pairings, particularly those popular in the Australian market, to determine its versatility and suitability for different dining experiences.
The judging takes place in a strictly controlled environment with temperature regulation, and all tastings are conducted using standardized wine glasses. Judges sample approximately 50 sake varieties.
Introducing YOIYOI’s Submitted Sake Varieties
This year, YOIYOI showcased three distinct sake varieties that represent our dedication to craftsmanship and innovation:
Sohomare Kamon – A Deep, Traditional Sake
Sohomare Kamon beautifully expresses the classic appeal of Japanese sake. Featuring a gentle ginjo aroma and a refined umami, it pairs excellently with traditional Japanese cuisine. Whether enjoyed with grilled fish or simmered dishes, its depth and elegance shine through.
Seppikosan Aiyama 1801 – A Refined Expression of Rare Rice
Seppikosan Aiyama 1801 is crafted using rare Aiyama rice, resulting in a sake with a rich sweetness and sophisticated aroma. Its complexity is reminiscent of fine white wines, making it a perfect match for cheese, creamy dishes, and modern fusion cuisine. The carefully selected 1801 yeast enhances its balance and aromatic profile.
Prince Nagaya, Tradition Meets Innovation
Prince Nagaya through precise temperature control during brewing, we achieved a harmonious balance of richness and freshness. It pairs beautifully with both Japanese cuisine and grilled meat dishes, offering versatility and depth.
